Fruits from la Isla del Encanto

Some of the best memories I have of growing up in Puerto Rico, was picking fresh fruits from the backyard. Right behind our house we had a guava tree, that also had a passion fruit ivy growing through it. Right next to it a beautiful 'acerola' tree that dressed in different shades of bright red, yellow orange and green depending on the level of ripeness of the Caribbean berry.
Our neighbors had a gigantic Mango tree, and the other neighbor had a lime tree. Now that I have to pay for all this items at the market, I realized how blessed we were to have all this bounty of fresh fruits within reach. I also remember visiting our cousins, and our aunt would send us to the backyard to pick pomegranates, which are called 'granadas'.
Fruits are nature's candy, and are full of antioxidants, fiber and fructose. I hope this video by the Orange County Library inspires you to go grab some fresh fruits soon.
Guava Jam
Ingredients
• 5 guavas
• ½ cup fruit juice (your preference, ex. orange, pineapple, or apple)
• 2 tbsp coconut sugar
• 3 seeded dates
• 2 tbsp chia seeds
• 1 tsp balsamic vinegar
• 1 tsp vanilla
• Pinch of sea salt
Mango Salsa Salad
Ingredients
• ¼ onion (thinly sliced)
• ¼ pepper (thinly sliced)
• 1 tomato (sliced)
• 1 tbsp parsley
• 1 tbsp extra virgin olive oil
• ½ tbsp balsamic vinegar
• ½ diced mango
• salt & pepper
• lettuce
• ½ cup spinach
Fruits are also a great way to make savory glazes and sauces. Try adding 2 tablespoons. of Adobo' Zon Original to the Guava Jam or the Mango Salsa to make a savor glaze for grilled pork, chicken, salmon, or ribs.
