Bacalaitos/Cod Fritters

Bacalaitos are one of the treats I get for sure when I go back to visit family in Puerto Rico. And the best place to get them is in Pinones, Loiza. Where the sea meets the sand, and the hot oil fries these delicious golden treasures.
Here's a simple recipe to get you started. Let your taste buds lead you and make it your own. If you are entertaining, make the wet dough and place in the refrigerator until you are ready to fry them, then take it out about 15 minutes before frying in hot oil. Once you make them, keep them in a hot oven to preserve their crispiness.
Cod Fritters Ingredients
• ½ lb. cod fillet, fresh (if salted dried, clean and boil first)
• 1 ½ cup of all-purpose flour
• 1 tsp baking soda
• 1 ½ cups of water
• 2 crushed garlic cloves
• 3 finely chopped recao (coriander) leaves
• 1 tbsp dried oregano
• 1 tbsp fresh finely chopped parsley
• 1 small diced sweet pepper (red bell pepper)
• ¼ of a full white onion
• 1 tbsp. of Adobo' Zon with Achiote
• Pinch of salt & pepper to taste
• 4 cups of grapeseed or avocado oil
